Cabbage Roll PreparationDay

Vernal Lambert, Dorothy Simons, putting on finishing touches of approximately 200 cabbage rolls, Marlene and  Larry Mitchell cleaning up.  Marlene and Vernal also cleaned the depot, and Larry and grandson Brandon Quinn set up tents on the depot grounds.

Recipe:

Steamed cabbage leaves wrapped around ground meat mixture of lean beef, chopped sweet onions, rice and seasonings to taste.  Rolls placed in oven roaster of layered cabbage leaves, tomato soup and tomato juice, garlic powder and oregano to taste.  These rolls were  greatly loved at the festival.  Roasters donated by Richard and Charlotte Mitchell Buchanan, Cheryl Mitchell, Dorothy Simons and her sister and the Church of Christ.  Richard also provided the barbecue grill for the tasty hotdogs!  Lots of great sweets were donated including Karen Mitchell Walker's apple walnut cake, Phyllis Barber's homemade pies, Russ Campbell's homemade cherry pies and many, many more! Nancy Green baked beans and helped with the reenactment, and also Kathy Devecka.  Author William Winebrenner's grandson was a big help at the grill!

A happy day of good food and entertainment was had by all!

Thanks to all who made the day possible!  Enough money was raised throughout the year and at the festival to purchase a caboose for the train depot grounds.
